Whitefish in Roasted Pepper Sauce

This Cod or Tilapia in Roasted Pepper Sauce is absolutely scrumptious, elegant and worthy of a special occasion. You won't believe how easy it is to make it!



Introduction

A quick and elegant fish dish featuring cod or tilapia fillets smothered in a creamy roasted pepper sauce. Great for both weeknight dinners and special occasions.

Ingredients

  1. 1 lb cod or tilapia fillets

    Use either fish based on preference or availability.

  2. 3 tbsp butter

  3. 1 medium onion, diced

  4. 2 garlic cloves

  5. 6 oz roasted peppers, chopped

    Home-baked and store-bought roasted peppers will work well.

  6. 6 oz roasted peppers, pureed

    You can use the same batch of peppers for both chopped and pureed portions.

  7. ¾ cup heavy cream

  8. ½ cup grated Parmesan cheese

  9. salt and pepper

  10. chopped parsley, to garnish

Directions

  1. Melt 2 tbsp of butter in a large, non-stick skillet and fry the cod or tilapia for 3–4 minutes on each side, until cooked through.

  2. Season the fish with salt and pepper, remove from the skillet and set aside.

    Keep the fish warm while preparing the sauce.

  3. In the same skillet, add the remaining 1 tbsp of butter and sauté the onion for 5 minutes.

  4. Add garlic, chopped and pureed roasted peppers, and cook for another 5 minutes.

  5. Stir in the heavy cream and Parmesan cheese, turn off the heat, and adjust salt to taste.

    The sauce should be creamy and slightly thickened.

  6. Return the fish to the pan and coat with sauce.

  7. Garnish with chopped parsley and extra Parmesan cheese if desired.
