Sweet Potato Salad
This is a classic Thanksgiving dish in the Judge Family. Its basically potato salad with a sweet potato twist.
Ingredients
1 can of Princella Sweet Potatoes in Syrup, drained
You can use fresh sweet potatoes, just peel, chop and roast with some glaze.
This should be done ahead of time so that potatoes can cool.3 tablespoons miracle whip
1 teaspoon durkees
1 teaspoon mustard
2 stalks celery, chopped
2 green onions, chopped
2 hard boiled eggs, chopped
salt
pepper
Directions
Combine the drained can of sweet potatoes with 3 tablespoons miracle whip and one tablespoon each durkees and mustard. Add more as you taste.
Add celery, green onion, and eggs.
Season to taste with salt and pepper.
