Mom's Pecan Pie
This is the pecan pie that my mom makes at Thanksgiving.
Ingredients
- 3 eggs (lightly beaten) 
- 1 cup corn syrup (Prefer dark over light) 
- 1 cup packed dark brown sugar 
- 1/3 cup butter or margarin, melted 
- 1/2 tsp salt 
- 1 tsp vanilla 
- 1 tablespoon flour 
- 2 tablespoons rum (spiced is best) 
- 1 1/2 cup pecans (some chopped, some whole or halved) 
Directions
- Beat eggs lightly 
- Everything except the nuts 
- Mix well 
- Add the pecans 
- Pour into a pie plate 
- Cover the edge of the crust with foil 
- Bake at 350 for 25 minutes 
- Remove the foil 
- Bake another 20-25 minutes, until a knife inserted in the center comes out clean and the center feels set like the edges.
