Mom's Pecan Pie
This is the pecan pie that my mom makes at Thanksgiving.
Ingredients
3 eggs (lightly beaten)
1 cup corn syrup (Prefer dark over light)
1 cup packed dark brown sugar
1/3 cup butter or margarin, melted
1/2 tsp salt
1 tsp vanilla
1 tablespoon flour
2 tablespoons rum (spiced is best)
1 1/2 cup pecans (some chopped, some whole or halved)
Directions
Beat eggs lightly
Everything except the nuts
Mix well
Add the pecans
Pour into a pie plate
Cover the edge of the crust with foil
Bake at 350 for 25 minutes
Remove the foil
Bake another 20-25 minutes, until a knife inserted in the center comes out clean and the center feels set like the edges.
