Mom's Pecan Pie

This is the pecan pie that my mom makes at Thanksgiving.



Ingredients

  1. 3 eggs (lightly beaten)

  2. 1 cup corn syrup (Prefer dark over light)

  3. 1 cup packed dark brown sugar

  4. 1/3 cup butter or margarin, melted

  5. 1/2 tsp salt

  6. 1 tsp vanilla

  7. 1 tablespoon flour

  8. 2 tablespoons rum (spiced is best)

  9. 1 1/2 cup pecans (some chopped, some whole or halved)

Directions

  1. Beat eggs lightly

  2. Everything except the nuts

  3. Mix well

  4. Add the pecans

  5. Pour into a pie plate

  6. Cover the edge of the crust with foil

  7. Bake at 350 for 25 minutes

  8. Remove the foil

  9. Bake another 20-25 minutes, until a knife inserted in the center comes out clean and the center feels set like the edges.
