Mom's Banana Bread
My moms classic banana bread from a slip of random paper in her pantry
Ingredients
1 scant cup white sugar
⅓ cup butter or margarine
2 eggs, beaten
3 bananas, crushed
About 1½ to 2 cups of banana.
2 cups flour
1 teaspoon baking soda
½ teaspoon salt
Healthy Variation
reduce sugar to ½ cup
replace butter with apple sauce
Directions
Preheat oven to 350°F
Cream butter and sugar.
Add beaten eggs and mix to combine.
Add crushed bananas and mix to combine.
Whisk flour, baking soda, and salt in a separate bowl.
This can be done in the same bowl if you make a pile with the flour and whisk the baking soda and salt into the flour first.
Gently mix the wet and dry together until just combined.
Over working here can cause too much gluten development, which will make your bread chewy.
Pour into a loaf pan greased with butter and lined with parchment paper.
I like to sprinkle the top with brown sugar before putting it in the oven.
Bake for 50 minutes or until a cake tester comes out nearly clean.
You can tent the top with foil if it browns too much.
