Garlic Scallion Mashed Potatoes



These are a very easy mashed potato side dishes. I like to have them with braised lamb or other slow-cooked meat.

Ingredients

  1. 8 medium red potatoes, quartered.

    You can use golden or russets here, but red is my favorite

  2. 3 cloves of garlic

  3. ¼ cup butter, separated

  4. 1 scallion, sliced and separated

    Separate this into the darkest green parts, the green parts, and the whites

  5. 1 cup of milk, warmed.

  6. ¼ cup grated parmesan cheese

Directions

  1. Boil the potatoes and garlic in a large pot of water.

  2. Once fork tender, drain in a collinear and return the pot to the hot stove.

  3. With the burner still on, add half of the butter, the scallion whites, and the garlic

    You will need to pluck the garlic from the strained potatoes, but in my experience, it will be on top.

  4. Smash up the garlic. Stir the butter often until it starts to brown, and make sure nothing burns.

  5. Dump in the potatoes and milk when the garlic and scallions are fragrant and browned.

  6. Mash with a potato masher, trying to incorporate the milk and butter.

  7. Add the remaining butter, regular scallion greens, and cheese, stirring to combine.

  8. Scoop into a bowl and top with dark scallion greens for garnish.
