This is about 8 oz of dried pasta2 tablespoons olive oil
6 tablespoons butter, divided
4 cloves garlic minced
1 teaspoon red pepper flakes
1 pound large shrimp
salt and pepper to taste
1 teaspoon italian seasoning
I made my own with dried oregano, basil, mustard seed and onion powder.
4 cups baby spinach
½ cup parmesan cheese
½ cup parsley chopped
the zest of 1 lemon
1 tablespoon lemon juice
About ½ a lemon
Directions
Cook the pasta to al dente, setting aside in a bowl if finished early.
Make sure to set aside about a cup of the pasta water for use in the sauce.
Heat olive oil and 2 tablespoons of butter until sizzling, add the garlic and red chilli flakes and cook until fragrant.
You can let the butter start to brown, but be careful to not burn the butter or garlic.
Add the shrimp and salt and pepper to taste. Cook until the shrimp start to turn pink.
Add italian seasoning and spinach and cook until wilted.
Add the pasta along with the remaining butter, parmesan, parsley, and about ½ cup of pasta water. Stir until the butter is melted and the sauce is sticking to the noodles.
You can add extra pasta water here to help the sauce come together.
Add the lemon juice and zest before serving and serve while hot.
