Baked Squash Fries
Super easy summer squash or zucchini fries, they are light and crispy and a great way to use your extra squash!
This recipe is adapted from Damn Delicious
Ingredients
½ cup panko breadcrumbs
¼ cup grated parmesan cheese
1 tablespoon italian seasoning
I made my own with dried oregano, basil, parsley, mustard seed, garlic powder and onion powder.
salt and pepper to taste
4 cups summer squash or zucchini cut into large spears
½ cup flour
2 eggs beaten
Directions
Preheat oven to 425 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
In a large bowl, combine panko, parmesan and italian seasoning; season with salt and pepper, to taste. Set aside.
In a smaller bowl, combine flour with salt and pepper to taste.
Working in batches, dredge zucchini in flour, dip into eggs, then dredge in panko mixture, pressing to coat.
I use the wet hand/dry hand method. Use one hand to coat in flour then drop into the egg. Then use the other hand to coat in egg and drop into bread crumb mixture. Then use the dry hand to coat in bread crumbs.
Place zucchini onto prepared baking sheet. Place into oven and bake for 20-22 minutes, or until golden brown and crisp.
Serve immediately, with dip.
